Today’s prey is a pheasant. Actually, I’m a pheasant NERD.
Despite being the national bird of Japan, pheasants are allowed to hunt. It’s a sorrowful bird.
In fact, a pheasant is not able to fly as same as a chicken and/or an ostrich. They runs fast in the field and jumps often. Therefore, the developed thigh meat is really delicious.
Now, while pheasants can be hunted anywhere, amateurs are hard to do that. That’s why, I recommend buying from pheasant farmers.
Miyazaki Pheasant Production Joint Company
They breed pheasants in near-natural conditions at the foot of the Kirishima mountain range which rises between Miyazaki and Kagoshima Prefectures.
While the taste is much close to the wild one, there is little risk of bacteria, so you can eat it with Tataki(patting sauce onto the pheasants that has been seared and prepared like Sashimi).
I love the texture of pheasant. In addition to the chewy texture that is comparable to a Shamo(game fowl), the more you chew, the more it overflows with the flavor that is unique to wild game meat.
Only the unlike point of a pheasant is that it becomes hard if it is grilled too much, would you be careful.
If you order by phone, you will be asked how much you want, but you can order a whole bird. You can finish it in several times.
On the first day, you should eat Tataki, on the second day you should eat Shabu-shabu, on the third day you should eat grilled thigh and on the last day you should eat Nabe(Japanese hot pot dish). Now you are also a good pheasant freak.

By the way, I recommend the Japanese pheasant Ryokan(Japanese-style hotel) “Kiji-Tei Hoeiso” in Hakone, one of the most famous Spa town, for pheasant freaks.
